Hidden in the Tuscan hills of the municipality of Montecatini Alto, lies the small village of Mariliana. Picturesquely surrounded by several thousand olive trees. The olives grown up to 450 meters above sea level, ripen under the Italian sun. The altitude and temperature differences give extra freshness to the young berries.<\/p>\n

From mid-October to late November, just when the olives turn from green to purple, the harvest begins. The olives fall into the nets, where they are selected by hand and brought to the olive press in small boxes.<\/p>\n

Washed and macerated- the olives are transformed into green liquid gold by gentle cold extraction.<\/p>\n
