As a special symbol, you will find on the bottle a small sage plant that alludes to the floral and herbal notes of this grape variety.
Vinification
Harvest by hand. Selection of berries on the vibrating table, from vintage 2020 with optical selection machine. Fermentation with indigenous yeast in steel tank followed by malolactic fermentation in French barrique in first occupancy. The 24-month aging takes place in barrique. We then carry out bottling (without filtering).
Tasting note
The color is dark, almost black, concentrated and brilliant. The nose is very original, with pronounced balsamic notes, hints of anise, mint and chocolate (After Eight) without green vegetal notes. The approach on the palate is determined, balanced and intense, but never aggressive. The fruit is well integrated and ripe. The fresh acidity of this red wine is stimulating and pronounced. The tannins are lush, sweet and spicy and the finish of this red wine develops extensively, in depth with hints of balsamic and spicy aromas. A wine that, despite its young years, already presents itself balanced and with an interesting personality.
